That being said...
Y'know, I love cooking. I do it (not terribly well) every chance I get. And since I know there are other people-who-like-to-cook on my f-list, I decided to start posting some of the recipes I try out.
Like this one:
Originally supposed to be Cranberry Orange chicken, but no cranberries, so:
2 tablespoons butter or marg
4 chicken breast halves with bone
2/3 cup orange juice, the fresher the better
2/3 cup blackberry/strawberries (can be fresh, frozen or mixed)
[add tsp raspberry vinegar - optional]
1 tblspn honey
2 tspns cornstarch
2 tblspns grated orange peel
1/8 tsp ground cloves
+wild rice
+frozen peas, or other veggies
1. In a large frying pan, melt butter over medium heat. Add chicken breasts and cook 10 mins on each side until not juices run clear (i.e. until not potentially poisonous)
2. In medium sized nonaluminum saucepan, mix oj, berries, orange peel, honey, cornstarch and cloves. Get the ingrediants in while the chicken is cooking, then start heating over medium heat and stirring while doing side 2 o' chicken. When done, spoon over cooked chicken breasts.
3. While chicken is cooking, start rice and veggies, all that good stuff.
Serve w/ bread and cheap Sahara Mart wine.
The sauce came out a little tart (not nec a bad thing though), probably because the blackberries I used were very bitter.
